Founded in Italy in 2009, the solidarity network links together chefs who have agreed to support Presidia producers. The Alliance project between Italian chefs and Slow Food Presidia currently unites more than 300 Italian restaurants and osterias who have committed to promoting the Presidia.
The Alliance chefs embrace the Slow Food philosophy, choosing local ingredients, respecting seasonality and working directly with small-scale producers, getting to know them and promoting their products.
Specifically, the chefs commit to including at least three Presidia products on their menus, prioritizing those produced locally, and identifying them with the Presidio Slow Food® logo and listing the name of the producer.
