The Acquavive cepodde (the onion’s name in dialect) is cultivated in the area surrounding the city of Acquaviva of Fonti. It is noted for its sweet flavor and is eaten raw. With its platter-like shape, the onion is carmine-red with a stark white interior and boasts a sweet succulent flavor. The onion is featured in local festivals, where it can be sampled in rustici: focacce stuffed with the onions and strong ricotta.
