Asiago is one of Italy’s most common PDO cheeses. The Presidium, however, is dedicated exclusively to the Stravecchio d’allevo (aged 19 months or more), an extremely rare product of outstanding complexity that is made in mountain dairies on the Asiago plateau. The aromas of this cheese recall freshly mown hay, ripe fruit and moss. The cheese initially tastes sweet and grows gradually more pungent, offering hints of toasted hazelnuts and grilled bread.
